What Do Egg Sizes Mean? A Guide to S, M, L and XL

Sizes are based on weight

Eggs are graded into four classes by weight:

  • S (Small): under 53 g
  • M (Medium): 53 – 63 g
  • L (Large): 63 – 73 g
  • XL (Very large): 73 g and above

Which size for what?

Most recipes are written for M or L eggs. In recipes where measurements matter, such as cakes, using the size stated in the recipe directly affects the result.

What does Grade A mean?

A Grade A egg has a clean, intact shell, is unwashed, fresh and fit for direct consumption. All Etaş eggs are Grade A.
